FRIED RICE 
3 c. boiled rice, refrigerated overnight
2 eggs, beaten and made into thin omelet
3 tbsp. vegetable oil
2 cloves garlic, minced
1/2 c. frozen peas
1/2 c. cooked ham, bacon, tiny shrimp or sliced Vienna sausages
Salt and pepper
2 tbsp. soy sauce
1/2 tsp. MSG (optional)
4 scallions, finely cut

In hot oil, fry garlic until brown. Add rice and stir fry for 5 minutes. Add cooked meat, shrimp or sausages. Stir fry for 3 minutes. Add peas. Season with salt and pepper, MSG and soy sauce. Slice omelet into thin strips and add 1/2 to rice. Stir fry on low heat for 5 minutes. Transfer to platter and garnish with remaining omelet and scallions.
