SCALLOPED POTATOES 
4 1/2 c. peeled potatoes, thinly sliced
1 c. peeled onion, thin sliced
3 tbsp. butter
3 tbsp. flour
1 tsp. salt
1/8 tsp. pepper
2 c. milk
1/3 c. fine, dry bread crumbs
2 tbsp. melted butter
Paprika

Prepare potatoes and onions. Melt the 3 tablespoons butter in fry pan. Blend in flour, salt, and pepper. Then add milk gradually. Cook, stirring until thickened. Remove sauce from fry pan. Alternate layers of potatoes and onions in fry pan, sprinkle lightly with additional salt and pepper.

Pour sauce over potatoes. Blend crumbs with melted butter and sprinkle over top. Season with paprika. Cover. Simmer about 45 minutes or until potatoes are tender. Transfer heat to broiler, brown top at 350 degrees. Watch closely.
