IRISH SODA BREAD 
4 c. sifted flour
1/4 c. sugar
1 tsp. salt
1 tsp. baking powder
2 tbsp. caraway seed
1/4 c. butter
2 c. raisins (1 c. dark, 1 c. light)
1 1/3 c. buttermilk
1 egg, unbeaten
1 tsp. baking soda
Egg yolk or cream for glaze

Bake at 375 or 350 degrees, depending on type of baking utensil. Sift together first 4 ingredients, then stir in caraway seeds. Use food processor or cut in butter until it looks like cornmeal. Stir in raisins. In another bowl, combine buttermilk, soda and egg, then stir into flour mixture until just able to pour out onto floured board and knead for several minutes. Spread into greased square or oblong pan. With a floured knife, cut a 4" cross in the center about 1/4" deep. Baking time will vary. The thicker the dough, the longer you bake. Usually 45 minutes to 1 hour and 10 minutes. Remove from oven. Cool for 10 minutes, then remove from pan. Glaze with egg yolk or cream.
