POTATO - STUFFED FRANKFURTERS 
8 frankfurters
Prepared mustard
1/2 c. grated cheese
2 c. hot mashed potatoes

Let frankfurters stand in boiling water, off heat, for 7 minutes. Partially split frankfurters lengthwise and spread inside lightly with mustard. Add grated cheese to mashed potatoes, beating until light and fluffy. Fill frankfurters with potato mixture, using a pastry tube or heaping mixture lightly with a fork. Place potatoes in broiler rack and broil until tops are lightly browned. Serves 4.
