HIGH PROTEIN BREAD 
4 tbsp. dry yeast
3 c. warm water
1/2 c. honey
1 egg
1/2 c. oil
1/2 tbsp. salt
1/2 c. soy flour
2 c. unbleached flour
7 1/2 c. whole wheat flour

Sprinkle dry yeast over warm water. Add honey. Let sit until yeast bubbles, 5 to 10 minutes. Add egg, oil, salt, soy flour and unbleached flour. Mix thoroughly. Add 5 1/2 cups whole wheat flour until you have a stiff dough. Put another cup of whole wheat flour on kneading surface and work into dough as you knead for 10 minutes. The dough should be rather stiff but elastic with small white gluten strands visible in it, as you pull it apart.

Put kneaded dough in covered bowl and let it rise until double in a warm place (1 hour). Put another cup of flour on board and knead again until most of the air is punched out (5 minutes). Let rise again until double, then form into 3 loaves. Put in oiled 9"x5" pans and let rise until 1" to 2" above pan. Place very carefully into cold oven and set at 350 degrees. Bake 30 to 35 minutes. Makes 3 large loaves.
