OYSTER PATTIES 
4 dozen oysters & liquid
1 onion, grated
2 tbsp. butter, melted
1 tbsp. flour
1/2 c. chopped mushrooms & juice
Salt & pepper
Dash cayenne pepper
2 tbsp. chopped parsley
12 patty shells
1/4 tsp. lemon juice

Cook oysters in their liquid by bringing to boil; then simmer 10 minutes. Saute onion in butter, blend in flour until smooth. Add remaining ingredients and oysters. Cook 5 minutes; pour into patty shells, bake at temperature set on 370 degrees for 5 to 8 minutes. For miniature patties; chop oysters fine before cooking.
