BAKED CHILE RELLENOS 
8 to 10 whole green chiles
10 oz. Monterey Jack cheese, grated
6 eggs, well beaten
2 tbsp. butter, melted
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. cumin

Roast, peel and seed chiles; or use canned whole green chiles, drained. Layer chiles alternately with grated cheese in buttered 1 1/2 quart casserole.

Mix eggs, butter, salt, pepper and cumin; pour this mixture over chiles and cheese. Bake at 350 degrees for 35 to 40 minutes.
