Cover chicken breasts with water. Salt lightly. Boil until chicken breasts are cooked, 15 to 20 minutes. Remove from heat and let cool. When cooled, tear chicken breasts into bite size pieces. Put chicken back into chicken broth. Peel and cube potatoes, add to chicken and broth. About 30 minutes before meal time, turn on heat and bring to a boil for about 15 minutes (potatoes will still be slightly firm). Mix up dumplings, according to box directions and follow box instructions for cooking. Let stand about 5 minutes before serving.
