CHEESECAKE 
1 1/4 c. graham cracker crumbs
2 tbsp. sugar
3-4 tbsp. butter

Stir together crumbs and sugar. Mix in butter. Press evenly in bottom of springform pan. Bake 10 minutes at 350 degrees. Cool.

FILLING:

1 lb. cream cheese
1 lb. Ricotta cheese
1 pt. sour cream
3 eggs
3 tbsp. flour
3 tbsp. cornstarch
1 1/2 c. sugar
Juice of 1 lemon
1/4 lb. melted butter
1 tsp. vanilla

Cream the cheeses and beat with sour cream at high speed. Add eggs, one at a time, then flour, cornstarch, sugar, lemon, butter, and vanilla and blend or beat to cheese mix. Bake 1 hour at 325 degrees. Leave in turned off oven 1 more hour with door closed.
