APPLE WALNUT CAKE 
2 eggs
1 c. Crisco oil
1 tsp. vanilla
2 c. white sugar
2 1/2 c. flour
2 tsp. baking powder
1 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
4 c. apples, diced
1 1/2 c. walnuts, chopped
1 (12 oz.) pkg. butterscotch chips

Mix eggs, oil and vanilla together; mix well. Add dry ingredients, apples and nuts and mix well again, makes stiff batter. Spread in a greased and floured cake pan. Sprinkle top of cake with butterscotch chips; press down on cake. Bake 1 hour at 350 degrees.
