CAULIFLOWER POLONAISE 
1 lg. cauliflower
1 tsp. lemon juice or vinegar
Boiling water
3/4 c. fine bread crumbs
6 tbsp. butter
1 tbsp. minced parsley
1/4 tsp. salt
1/4 tsp. paprika
Dash white pepper
3/4 c. grated cheese

1. Trim leaves, stalks and core from cauliflower.

2. Place cauliflower in a saucepan filled with lemon juice and boiling water to nearly cover head; cover and cook until cauliflower is barely cooked.

3. Drain; keep hot.

4. Meanwhile saute bread crumbs in butter until golden.

5. Add parsley, salt, paprika and pepper.

6. Put cauliflower in a serving bowl. Spoon crumbs evenly over cauliflower.

7. Dust with grated cheese. Serve at once.
