ZUCCHINI & CHICKEN 
4 med. zucchini
4 chicken breasts, boned and flattened
Salt and pepper to taste
Garlic powder
1/2 c. grated Parmesan cheese
3 tbsp. sweet butter
1/4 c. dry white wine
1/2 pt. heavy cream
4 tbsp. grated cheddar cheese

Preheat oven to 400 degrees. Parboil zucchini for 5 minutes. Cut in half lengthwise and scoop out pulp. Sprinkle chicken breasts with salt, pepper, garlic powder and Parmesan cheese. Saute chicken breasts and zucchini pulp in butter until breasts are brown. Add wine and simmer 5 minutes. Remove from heat and chop in a wooden bowl. Add cream and return mixture to zucchini shells. Top with cheddar cheese. Bake for 1/2 hour. Makes 4 servings.
