TWICE COOKED POTATOES 
5 potatoes, peeled, boiled then diced
3 tomatoes, chopped
2 onions, chopped
1 tsp. turmeric powder
oil as required (for frying)

Peel the potatoes and boil them until soft and tender. After boiling them, dice and set aside.

In a saucepan, add oil, chopped tomatoes and onions. Cook for 8 minutes. Add turmeric powder and mix.

When the tomatoes and onions are nearly done add the diced potatoes and continue cooking until the tomato and onion is completely cooked.

Serve hot.
