CRANBERRY WALNUT CAKE 
1 3/4 c. sugar
2 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. salt
1/2 c. Wesson oil
2 eggs
1 tsp. vanilla
2 c. sliced apples
1/2 c. chopped walnuts
1/2 lb. cranberries

MAPLE FROSTING:

1 1/2 c. maple syrup
4 egg whites
1/2 tsp. salt

Sift and mix dry ingredients. Beat eggs. Add oil and vanilla. Alternate with dry ingredients, adding nuts, apples, and cranberries last. Grease and flour 9 x 13 inch pan. Bake 45 to 50 minutes at 350 degrees.

Frosting: Bring syrup to a boil in heavy saucepan. Continue to cook on low heat. Boil until the syrup spins a fine thread in water or soft ball. Beat egg whites and salt in bowl at high speed. Pour hot maple syrup in a fine stream in egg whites. Beat until mixture is thick and stiff, but still soft. Put on cool cake.
