CHICKEN WITH LEMON 
2 to 3 lb. chicken quartered
4 tbsp. melted butter
1 tbsp. flour
1 c. chicken broth
3 sprigs of parsley
Pinch thyme
1 bay leaf
1 tsp. Kitchen Bouquet
Salt and pepper to taste
1 lemon, diced
1 lemon, sliced (optional)

Brown chicken in butter. Remove chicken from pan. Add flour and mix it with the butter. Then add chicken broth, parsley, thyme, bay leaf, Kitchen Bouquet, salt and pepper. Add diced lemon, return the chicken to the pan and cook for 30 minutes or until tender. One sliced lemon may be used for decoration around the platter.
