SIMPLE SWEET & SOUR CHICKEN 
6 pieces of skinless, boneless chicken breasts
1 env. dried onion soup mix
1 reg. size bottle of 1, 000 Island salad dressing
1 reg. size jar apricot preserves
Hot rice

Place chicken breast pieces in baking dish (whatever size you need to fit in the pieces).

In a bowl mix the preserves, soup mix and salad dressing. Pour over the chicken. Cover with foil and bake at 350 degrees for 45 minutes. Pour sauce into a serving bowl or gravy boat. Serve with a bowl of hot rice.
