SCOTCH EGGS 
8 hard boiled eggs
1/4 c. flour
1 lb. bulk pork sausage
3/4 c. bread crumbs
1/2 tsp. sage
1/4 tsp. salt
2 beaten eggs
Vegetable oil

Coat each egg with flour. Divide sausage into 8 equal parts. Pat 1 part sausage onto each egg. Mix crumbs, sage, and salt. Dip sausage coated eggs into beaten eggs. Roll in crumbs. Heat oil to 360 degrees in 3 quart pan. Fry eggs 4 at a time for 5-6 minutes. Drain.
