BAKED HUSH PUPPIES 
1/2 c. yellow cornmeal
1/2 c. all-purpose flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. sugar
Pinch of ground red pepper
1/4 c. finely chopped onion
1 egg, beaten
1/3 c. milk
2 tbsp. vegetable oil

Preheat oven to 425 degrees. Spray cups of small muffin pan with non-stick vegetable spray. Blend cornmeal, flour, baking powder, salt, sugar and ground red pepper in medium bowl. Stir in onion. Beat egg, milk and oil in small bowl. Add to cornmeal mixture and stir just until blended.

Spoon batter into prepared muffin pan, filling cups 1/2 to 2/3 full. Bake until golden, about 15 to 20 minutes. Serve hush puppies immediately. This recipe can be doubled. Makes about 6.
