GRANOLA 
5 c. slow-cooking oats
1 c. coconut
1/2 c. chopped cashews
1/2 c. wheat germ
1 tsp. cinnamon
1/2 c. honey
1/3 c. vegetable oil
1 tsp. vanilla

Bake oats at 350 degrees for 10 minutes in a 2-quart casserole dish. Add remaining ingredients to hot oats. Bake 30 minutes, stirring every 10 minutes.

OPTIONAL: Add 1 1/2 cups chopped dried fruit plus 1 tablespoon brown sugar to oat mixture.
