PEACH - FRITTERS 
2 eggs
2 egg yolks
4 tbsp. whole wheat and/or rye flour
2 tsp. honey
1/4 tsp. cinnamon
2 peaches, pitted, peeled & coarsely chopped
2 egg whites
Butter
Cinnamon

Beat eggs and egg yolks. Stir in flour, honey, cinnamon and peaches. Beat egg whites until stiff (not dry) and fold into batter. Melt butter in medium hot skillet and drop batter by tablespoon into it. Cook to a golden brown on both sides. Serve warm with butter and cinnamon.
