CHICKEN CHOW MEIN 
1/2 lb. mushrooms, sliced thin
2 green peppers + 2 med. onions, cut in 1/2" cubes
4 stalks celery sliced
3 tbsp. cooking oil

Stir-fry ingredients in cooking oil 6 to 8 minutes. Add: 2 tbsp. soy sauce

Turn heat to low, cover and simmer 10 minutes. Mix in: 1/4 c. cold water 1/2 tsp. salt 1/8 tsp. pepper

Heat, stirring constantly, until thickened and clear. Add: 1 lb. can bean sprouts, drained 1 can water chestnuts, sliced & drained 1/2 c. cashews (broken pieces) 1 pkg. frozen snow peas

Or left over pork roast.

Heat and stir about 5 minutes, just to heat through. Serve with rice and Chinese noodles. Makes 6 to 8 servings.
