APPLE COCONUT CAKE 
3 c. flour
1 tsp. baking soda
1 tsp. salt
1 c. oil
3 eggs
1/2 c. flaked coconut
2 1/2 c. sugar
2 tsp. vanilla
2 c. chopped pecans
3 c. peeled, chopped cooking apples

Combine flour, soda, salt and set aside. Then combine oil, eggs, sugar and vanilla. Beat at medium speed for 2 minutes. Add flour mixture and mix at low speed just until blended. Fold in pecans, apples and coconut. Batter will be stiff. Spoon into greased and floured 10" tube pan. Bake at 350 degrees for 1 hour and 20 minutes or until cake tests done. Cool in pan 10 minutes. Remove from pan and immediately drizzle glaze over cake.

GLAZE:

1/2 c. firmly packed light brown sugar
1/4 c. milk
1/2 c. butter

Combine all ingredients in heavy saucepan. Bring to full boil and cook, stirring constantly for about 2 minutes. Let cool to lukewarm. Yields about 1 cup.
