YELLOW SQUASH BREAD 
2 tsp. plus 1 tbsp. baking powder
3 c. flour
1 tsp. salt
1 c. sugar
2 c. cooked and mashed summer squash
2 eggs
1 c. Puritan oil

Combine dry ingredients together and mix well. Add squash, eggs and oil.

Bake in muffin tins or 9 x 13 inch pan. Bake at 375 degrees for 25 minutes. If using glass pan reduce heat 25 degrees.
