BAKED CHICKEN AND ZUCCHINI 
4 chicken portions
Salt and pepper
4-6 tsp. butter
1 tbsp. chopped parsley
Juice of 1/2 lemon
Zucchini, pared in strips and thickly sliced

Preheat oven to 350 degrees. Grease pan with little butter. Season chicken with salt and pepper. Cream butter until soft and parsley and lemon juice. Spread over chicken and bake 1 hour.

Meanwhile, blanch zucchini in boiling, salted water for 5 minutes. Add to chicken 15 minutes before chicken is done. Turn and baste the zucchini in the melted parsley butter. Serve with pan juices and vegetables.
