GINGER PEACHY CHICKEN | |
4 boneless chicken breasts 1 can peach halves (save juice) 3/4 c. ginger ale 3 tbsp. butter 1/4 tsp. ginger 3 tbsp. soy sauce 1/4 c. brown sugar Brown chicken in butter. Mix together 3/4 cup juice from peaches, ginger ale, brown sugar, ginger and soy sauce. Pour over chicken, reduce heat, simmer 20 minutes uncovered. Put chicken in casserole dish. Thicken sauce with cornstarch. Arrange peaches around chicken. Pour sauce over chicken and peaches, sprinkle with chopped walnuts (optional). Bake uncovered 10 minutes at 350 degrees. |
