RED BEANS & RICE 
1 lb. red kidney beans
4 qts. water
3/4 c. chopped onion
3/4 c. chopped celery
3/4 c. chopped green pepper
2 tsp. minced garlic
1/2 c. butter
2 bay leaves
2 tsp. Hungarian paprika
1 tsp. whole thyme
1/2 tsp. cayenne pepper
1/2 tsp. oregano
1 lb. smoked Polish sausage
1/2 c. chopped fresh parsley

Soak beans overnight, drain and add 4 quarts water, bring to boil. Cook on medium heat uncovered for 1 1/2 hours. Saute onion, celery, peppers and garlic in butter. Add to beans with next 5 ingredients. Bake sausage at 350 degrees for 20 minutes and add to beans. Cook 45 minutes. Add more water if necessary. Remove bay leaves and stir in parsley. Serve over rice.
