FRESH PEACH COBBLER | |
3 c. sliced fresh peaches 1 c. sugar 1/4 tsp. almond extract 1 tbsp. fresh lemon juice 1 tsp. grated lemon peel 1 1/2 c. sifted flour 3 tsp. baking powder 3 tbsp. sugar, divided 1/2 tsp. salt 1/3 c. shortening or shortening and butter 1/2 c. milk 1 well beaten egg Preheat oven to 400 degrees. Arrange peaches in greased 8-inch square pan. Sprinkle with mixture of 1 cup sugar, almond extract, lemon juice and peel. Heat in oven while preparing batter topping. Sift together flour, baking powder, 1 tablespoon sugar and salt. Cut in shortening until mixture is like coarse crumbs. Add milk and egg at once. Stir until flour is just moistened. Spread batter over hot peaches. Sprinkle on remaining 2 tablespoons sugar. Bake 35-40 minutes. Makes 8 servings. |
