FRESH PEACH COBBLER 
3 c. sliced fresh peaches
1 c. sugar
1/4 tsp. almond flavoring
1 tbsp. lemon juice (fresh, frozen or canned)
1 tsp. grated lemon peel
1 1/2 c. flour
1/2 tsp. salt
3 tsp. baking powder
1 tbsp. sugar
1/3 c. shortening
1/2 c. milk
1 well beaten egg
2 tbsp. sugar

Arrange peaches in greased 8" square baking pan. Sprinkle with mixture of 1 cup sugar, almond flavoring, lemon juice and lemon peel. Heat oven to 400 degrees. Heat in oven while preparing shortcake.

Sift together flour, salt, baking powder and 1 tablespoon sugar; cut in shortening until mixture is like coarse crumbs. Add milk and egg at once; stir just until flour is moistened. Spread dough over hot peaches; sprinkle with 2 tablespoons sugar. Bake 35 to 40 minutes. Makes 8 to 9 servings.
