DUCK & WILD RICE | |
2 or 3 ducks Salt & pepper 1/2 c. chopped onion 1 sliced green pepper 2 or 3 celery stalks, cut 3 c. water Clean ducks. Rub with salt and pepper. Place in baking pan, breast side up. Add onions, pepper slices, celery and water to pan. Cover and bake at 325 degrees for 2 hours, or until ducks are tender. Baste occasionally. Serve on a bed of wild rice. |
