2 eggs 1 1/2 c. sugar 1 lb. 1 oz. can fruit cocktail, undrained 1 1/2 tsp. baking soda 2 1/4 c. flour 1 tsp. vanilla 1 1/3 c. coconut 1/2 c. chopped nuts Beat eggs and sugar until light and fluffy. Add fruit cocktail, flour, salt, soda, and vanilla. Beat at medium speed until well blended. Grease and flour large baking dish (15 x 10 x 1 inch). Spread mixture in pan and sprinkle with coconut and nuts. Bake at 350 degrees for 20-25 minutes or until golden brown. While still hot, drizzle with Glaze. Cool. Cut into squares. Makes 36-40. GLAZE: 3/4 c. sugar 1/2 c. butter 1/4 c. evaporated milk 1/2 tsp. vanilla 1/2 c. chopped nuts Combine all ingredients, except nuts, in a small saucepan. Bring to a boil for 2 minutes, stirring constantly. Remove from heat; beat slightly. Stir in walnuts. Cool. Spread over hot fruit bars. |
