GARDEN VEGE'S IN VINEGAR | |
3 or 4 cucumbers (med. to small are best), slice about 1/8 inch thick round 1 lg. green peppers, sliced lengthwise 2 or 3 med. sliced onions separated into rings 1 nice firm red tomato cut in wedges Prepare veggies as directed. Sprinkle with approximately 1 teaspoon of salt and pepper to taste and approximately 1 tablespoon sugar let set 2 or 3 minutes. In meantime, prepare 1/2 to 3/4 cup vinegar and equal or little more water (taste to see if needs more of either). Pour over the veggies and refrigerate about an hour or so before serving. Put tomato on top very carefully so it will look nice and not come apart. |
