PASTA FAGIOLI 
2 lg. cans whole tomatoes
2 cans cannelloni beans
2 lg. onions, chopped
8 cloves garlic, chopped
1 lb. fresh spinach, chopped
2 stalks celery, finely chopped
1/2 lbs. Ditalini macaroni
Grated cheese
Olive oil
Black olives (optional)
Salt
Pepper
Oregano
Garlic salt

Saute onions, garlic, celery and spinach until onions are golden brown. Crush (by hand) tomatoes and add to onion mixture. Add spices, cover and let simmer for 30-40 minutes. Drain and rinse beans. Add beans and continue simmering for 15 minutes. Add grated cheese and sliced black olives. Boil macaroni for approximately 8-10 minutes. Drain and add to tomato mixture.

Serves 6.
