MAGIC APPLE ROLL | |
2 c. applesauce 1/2 tsp. ground cinnamon 4 egg whites 3/4 c. sugar 2/3 c. all purpose flour 3/4 tsp. baking powder 1/4 tsp. salt 1 tsp. vanilla extract Confectioners' sugar Preheat oven to 400 degrees. Spray a 15 x 10 x 1 inch jelly roll pan or cookie sheet with cooking spray. Line with waxed paper spray again with cooking spray. Pour applesauce into prepared pan, spreading evenly. Sprinkle with cinnamon, set aside. Beat egg whites in mixing bowl at high speed of electric mixer until foamy. Gradually add sugar, beating until mixture is thick and light. Sift flour, baking powder, and salt together. Fold into egg mixture. Stir in vanilla. Pour batter (I spooned) into prepared pan and bake 15 to 18 minutes until golden. Let cake stand 5 minutes. Turn out, apple side up, on a paper towel sprinkled with confectioners' sugar. Peel off waxed paper. Quickly trim off crisp edges of cake. Roll cake at once lengthwise, raising paper towel to roll. Dust top with confectioners' sugar (I used cloth towel). This does work and it's good. |
