SHRIMP SCAMPI 
1/4 c. butter
1/4 c. olive oil
6 cloves garlic, minced
1/2 tsp. salt
Freshly ground black pepper
1/8 c. parsley, chopped
2 lbs. lg. shrimp, uncooked, shelled and deveined
Lemon wedges for garnish

Preheat broiler. Melt butter in a large, shallow baking dish. Mix in olive oil, garlic, salt, pepper and parsley. Add shrimp and toss lightly to coat. Broil shrimp 4 inches from heat for 5 minutes. Turn and broil 5 to 7 minutes longer, or until lightly browned. Serve on a bed of rice with lemon wedges as garnish.
