TWICE - BAKED POTATOES 
4 baked potatoes
1 c. sour cream
1/2 c. grated Cheddar cheese
1/4 c. butter
2 tbsp. parsley
2 tbsp. chopped green onion tips
Paprika
Salt & pepper to taste

Cut off top skin of baked potatoes. Scrape out potato into a bowl. Mash potatoes with potato masher. Add butter, sour cream and cheese. Mix well. Add parsley and green onions. Mix and add salt and pepper to taste. Fill potato skins with potato mixture. Sprinkle with paprika. Bake at 350 degrees for 20-30 minutes. They can be made up ahead of time and refrigerate until ready to bake.
