CHILI RELLENOS | |
1 lg. can green chili strips 1 1/2 lbs. Monterey Jack cheese 1 lb. Longhorn or cheddar cheese 2 lbs. ground beef (or chicken) 6 lg. eggs 1/4 c. cornstarch 1 3/4 c. milk 1/2 tsp. salt (I omit because the cheese is salty enough) Pepper to taste Put one layer of chilies in the bottom of a 9 x 13 inch casserole dish, then a layer of browned ground beef (or chicken), sprinkle grated cheddar and jack cheeses. Repeat with a layer of chilies, meat, and cheeses. Put cornstarch (and salt if wanted) in a bowl, add milk slowly and mix till lump free. Add eggs and beat; add pepper. Pour over casserole and bake at 350 degrees until toothpick comes out clean (325 degrees if using glass dish), 35 minutes to 1 hour. You can also partially cook, and then freeze, and finish cooking when you wish to serve. |
