PINEAPPLE CARROT SALAD 
1 (3 oz.) pkg. apricot or peach gelatin
1 (16 oz.) cream cottage cheese
1 c. shredded carrots
1 c. thawed Cool Whip
1/2 c. mayonnaise
1 (8 oz.) can crushed pineapple

Add gelatin to cottage cheese and blend well. Stir in carrots, pineapple, Cool Whip and mayonnaise, mixing well. Chill at least 1 hour. Serve on lettuce leaves. 8 servings.
