CHEESE TOPPED CAULIFLOWER 
1/2 c. mayonnaise
3/4 c. shredded sharp Cheddar cheese
2 tsp. Dijon mustard

Wash cauliflower. Remove green leaves and stem end, leaving head intact. Soak cauliflower in salted water 15-20 minutes and drain well. Cook cauliflower covered 10-15 minutes in boiling salted water. Drain and place cauliflower, stem down, in a lightly greased shallow casserole.

Combine remaining ingredients and spread over cauliflower. Bake at 350 degrees for 10 minutes, or until cheese is melted. Makes 4-6 servings.
