LOYE'S DIJON CHICKEN 
6-8 baked chicken breasts
1 - 1 1/2 lbs. sliced mushrooms
3-4 garlic cloves
1 med. chopped onion
1 c. dry white wine
1 1/2 jar Dijon mustard
Cornstarch as needed
Rice

Brown chicken breasts in small amount of oil in deep skillet. Add mushrooms, onion, garlic, wine and mustard. Simmer, covered at least 30 minutes, preferably 45 minutes to 1 hour. To change consistency, if too thin, add cornstarch to small amount (1 to 2 tablespoons) water and stir into mixture or simmer longer without lid. Serve over rice.

Very easy recipe. Can be made ahead of time and reheated. You cannot go wrong with this recipe, vary the ingredients as you wish. This recipe is very forgiving.
