APPLE CRISP 
Juice of 1 lemon
4 lg. tart apples, about 2 lbs.
2 tbsp. granulated sugar
3/4 tsp. cinnamon
2 c. water
1/2 c. unsweetened apple juice
1 tsp. grated lemon zest
1/4 tsp. ground ginger

TOPPING:

1/2 c. rolled oats
3 tbsp. all purpose flour
3 tbsp. light brown sugar
2 tbsp. butter

Preheat oven to 375 degrees. Grease a 9 inch square microwave baking dish. Place lemon juice and water in bowl. Peel, core and thinly slice apples; drop into lemon water to prevent discoloration. Drain apples, reserving 1/4 cup of lemon water. Toss in a bowl with apple juice, reserved lemon water, sugar, lemon zest, cinnamon and ginger. Spoon mixture into baking dish. Cook in microwave on high for 7 minutes, stirring twice, until apples are tender but not mushy. Remove from microwave.

For topping, combine dry ingredients in bowl. Cut in butter with 2 knives; toss lightly with fingers until mixture resembles course meal. Sprinkle topping evenly over apple and bake in preheated oven bubbly and golden, about 20 minutes. Let rest for 5 minutes before serving. Serves 9.

Since microwave ovens vary in power, you may need to adjust your cooking time.
