SUPER EASY SCALLOPED POTATOES 
2 lb. bag frozen hash browns
1/2 c. melted butter
1 tsp. salt
1/4 tsp. pepper
1 can cream of chicken soup, undiluted
2 c. cheddar cheese, grated
1/2 c. onion, chopped
2 c. sour cream
2 c. crumbs (corn flakes, chips, crackers)

Heat oven to 350 degrees. Thaw potatoes. Combine with rest of ingredients except crumbs. Sprinkle crumb mixture on top. Use 9 x 13 inch pan or 2 (8 x 8 inch) pans, greased. Bake 45 minutes. This freezes very well. Serves 10 to 12.
