GARLIC POTATOES 
8 red-skinned new potatoes
1/4 c. olive oil
Coarse (Kosher) salt to taste (optional)
Black pepper to taste
4 cloves garlic, finely chopped
2 tbsp. coarsely chopped Italian parsley

Preheat oven to 350 degrees. Prick potatoes with fork. Bake 1 1/2 hours. Remove from oven, cut into quarters and place in bowl. WHILE HOT, toss with oil, salt, pepper and garlic. Gently toss in parsley. Serve warm, or at room temperature.
