FRY CAKES 
1 1/4 c. sugar
1/4 c. melted butter
3 eggs, well beaten
2 tsp. baking powder
1 tsp. baking soda
1/2 tbsp. salt
1 tsp. vanilla
1 c. buttermilk
4 1/2 c. flour

Mix sugar, butter, eggs and vanilla together. Sift flour, baking soda, baking powder and salt together. Add along with buttermilk. Mix well. Let stand overnight in refrigerator.

Next morning, roll out. Fry in hot lard, 375°F. Turn when they crack open.

If you wish to use an electric frypan, fry at highest.
