NORTHERN HERRING 
FIRST INGREDIENTS:

2 qts. cubed fish
1 c. pickling salt
2 qts. water

Put first ingredients in gallon glass or earthern crock. Place in refrigerator for 48 hours. Wash fish in cold water several times. Dry on paper towels.

SECOND INGREDIENTS:

3 tsp. pickling spice
3 c. vinegar
2 1/2 c. sugar
3 sliced onions

In gallon jar add first 3 ingredients (second group). Stir to dissolve sugar. Add fish and sliced onions. Cover and refrigerate 48 hours. Place in small er covered containers.
