ORANGE RICE PUDDING 
2 c. water
1 c. uncooked rice
1 tbsp. fresh grated orange peel
1 tbsp. sugar
1/2 c. raisins
1/4 c. fresh orange juice
1 pkg. (3 3/4 oz.) instant vanilla pudding
2 c. cold milk
2 naval oranges, peeled and cut in bite size pieces

In large saucepan combine water, rice, orange peel and sugar. Bring to a boil, reduce heat. Cook covered 20 minutes. Spoon rice mixture into a large bowl. Cool 10 minutes.

Meanwhile in a small saucepan simmer raisins in orange juice 1 minute. Prepare pudding with milk. Stir until thick. Add rice mixture then remaining ingredients. Serve hot or cold. Makes about 5 cups.
