CHRISTMAS RELISH 
10 red mangos
10 green mangos
10 green tomatoes
10 onions
10 celery
10 carrots
3 tbsp. coarse salt

Grind all vegetables and mix well. Add 3 tablespoons of coarse salt. Let set for 30 minutes. Drain or squeeze out salt water. Add 6 cups sugar and 3 cups vinegar. Stir until sugar is dissolved. Put in jars cold (do not cook) and seal.

Makes 8 or 9 pints.
