SUMMER SAUSAGE 
4 lbs. ground beef
3/4 tsp. mustard seed
3/4 tsp. onion powder
3/4 tsp. fine ground Java pepper
3/4 tsp. garlic powder
3 tbsp. Morton Quick Cure Salt
1 c. cold water
Liquid smoke

Mix everything into a large bowl; (except liquid smoke), well with hands. Cover and refrigerate overnight. Shape into tight rolls (about 2 inch diameter x 6 inches long). Brush liquid smoke on rolls and wrap each in foil. Cook at 350 degrees for 1 hour.
