BRUNCH STRATA 
10 pieces trimmed buttered bread or 1 pkg. seasoned croutons
8 oz. shredded Cheddar cheese
1 1/2 tbsp. minced onion
7 eggs
2 c. milk
1/2 tsp. dry mustard
Salt
Lemon pepper

Spray pan with Pam or grease pan otherwise, using a large rectangular pan or 2 medium square or round pans. Cover bottom with bread and sprinkle with minced onion and Parmesan cheese. Add layer of Cheddar cheese, layer of seafood (your choice), or sliced ham, or diced vegetable (spinach, asparagus or broccoli). Continue with second alternating layers, top being the Cheddar cheese. You may want or need a little more than the 8 ounce.

In blender mix eggs, milk and mustard; add salt, lemon and pepper to taste. Pour over all. Refrigerate overnight. (May be frozen.) Bake at 350 degrees for 45 minutes or until puffed up and golden brown. About mid baking you may sprinkle with Parmesan cheese and/or paprika. Let cool 10 minutes before cutting.

When I'm having more than 8 people for brunch I make 2 kinds of Strata. The leftovers may be reheated and cut into bite-sizes for hors d'oeuvres. Freezes well.
