CARROT CAKE 
2 c. sugar
2 c. flour
1 1/4 tsp. baking powder
1 1/4 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
3 eggs
3/4 c. salad oil
2 jars carrots (Jr. baby food)
1/2 c. chopped walnuts

Mix dry ingredients; add eggs, salad oil and carrots. Mix thoroughly. Add chopped walnuts. Pour into lightly greased and floured 13"x9" pan. Bake at 350 degrees for 30 to 35 minutes.

CARROT CAKE FROSTING (CREAM CHEESE) :

3 oz. cream cheese
1/4 c. butter
2 c. 10X sugar, sifted
1 tsp. vanilla

Soften cream cheese and butter; beat until fluffy. Gradually add 10X sugar, beating until smooth; stir in vanilla. Spread on cake.
