CARROT CAKE | |
2 c. sugar 1 1/2 c. oil 4 eggs 2 c. flour 3 c. finely chopped carrots 1 c. chopped walnuts 1 tsp. salt 2 tsp. baking powder 2 tsp. baking soda 2-3 tsp. cinnamon Blend sugar and oil. Add eggs. Add dry ingredients and mix well. Add carrots and nuts. Pour into 2 greased and floured 8 or 9-inch cake pans. Bake at 350 degrees for 40-45 minutes. CREAM CHEESE FROSTING: 1 (8 oz.) pkg. cream cheese, at room temperature 1 stick butter, at room temperature 2 tsp. vanilla 1 box confectioners' sugar Combine all ingredients. Mix well. |
